Aperol Spritz

Aperol Spritz

The bright half of the house. A spritz is a ratio wearing a big glass of ice: three prosecco, two Aperol, one soda, and an orange slice doing more work than it gets credit for. Build it cold and drink it slow.

Recipe Card

Ingredients

  • 3oz (90ml) prosecco, well chilled
  • 2oz (60ml) Aperol
  • 1oz (30ml) soda water
  • Orange slice, for garnish
  • Plenty of ice

Method

  1. Fill a large wine glass generously with ice.
  2. Pour in the prosecco, then the Aperol, then the soda.
  3. Stir once, gently, to bring it together without knocking out the bubbles.
  4. Tuck the orange slice into the glass and serve.

Tip: Cold is everything here. Chill the prosecco hard and keep the glass full of ice, or the drink goes soft and sweet within minutes.

Variations

  • Campari Spritz. Swap Aperol for Campari. Drier, more bitter, and a deeper red. For drinkers who find Aperol too gentle.
  • Hugo Spritz. Swap the Aperol for elderflower liqueur and add a few mint leaves. Floral, pale, and quietly lovely.

Questions

What is the official spritz ratio?

Three parts prosecco, two parts Aperol, one part soda. It is printed on the bottle and it earns its place. Pour it in that order so the Aperol sinks through the prosecco.

Can I use another sparkling wine?

Yes. A dry cava or a dry crémant both work. Keep it dry, because Aperol brings plenty of sweetness on its own.
